We are a team of experts in the Italian traditional food sector led by inventor Alessandro Cuomo.
Our specialization lies in the development of cabinets, devices, and innovative methods for aerobic pH maturation and preservation of traditional Italian cured meat, fish, and salami.

I am Michael Combs, the responsible person in the USA and a certified Master of Traditional Italian Charcuterie, meat and fish maturation, and a certified Executive Chef.

With a profound passion for meat and fish charcuterie, I have partnered with Stagionello to revolutionize salumi production in the U.S. using patented Cuomo Method devices.

Our passion for Italian culinary tradition has driven us to create innovative medium to large cabinets and custom systems to produce dry-aged meats and fish, or mature them in genuine high nutraceutical value food.

Thanks to our experience and ongoing scientific research in collaboration with 15 universities and culinary schools worldwide, we have successfully developed and distributed approximately 4,000 pH-controlled devices that allow for perfect maturation, safe preservation, and optimal long-term storage of food products.
